This is an excellent question! I hope I can help. One of the materials I am using is a plastic disc 3 feet in diameter that looks the same as corrugated cardboard. This material is often used for signs and you can find it in any craft or home supply store (home depot). Unfortunately it will deviate more than 1/8" at the perimeter but since it is just for prototyping it is fine to start. The reason this is good material is because you need to punture it often with various axles, posts, pulley/lever support points etc. etc.
What you will find as you begin construction is this; 1) you get a brilliant revelation of how to build Bessler's wheel. 2) you put together your idea 3) it does not work as expected and you have to start over. Because of this cycle, you will be much better off using a plastic composite that can be quickly re-adjusted, re-punctured and manipulated. You should plan on having at least one or two strong 'revelations/inspirations' per week especially when first starting.

: Thickness is not a big concern as long as weight is kept to a minimum. Solid or composite material can be used.
